One of the best things about fall is the plethora of delicious apples. There are so many ways to use apples- baking, stewing, mulling, juicing, you name it. So fall means I get to use in-season apples to make raw apple crisp. It satisfies my sweet craving when I have one but without any refined sugars. Just fresh and whole ingredients. The big bonus is that you get healthy omega-3 fatty acids from the nuts. This is a creative recipe to have dessert in a much healthier way.
Ingredients (serves 5 to 6)
- 3 apples (I prefer fuji or gala), cored and chopped
- 1/4 cup of hazelnuts
- 1/4 cup of pecans
- 1/4 cup of walnuts
- 1/4 cup almonds
- 1/3 cup of fresh squeezed OJ
In a food processor or blender, blend all of the nuts. Be sure not to over blend so you don’t release too many oils (it will then start to get too mushy like a nut butter). Spread over chopped apples. Squeeze the fresh orange juice over the apples and nuts and enjoy!
