I’m not a fan of seafood, EXCEPT for fish tacos. And specifically, Baja fish tacos because, well, it’s fried and delicious. I tend to fantasize about a delicious west coast Baja fish taco often. A little too often.
It’s not realistic for me to eat fried foods, especially since it causes an acid reflux flare up. Great thing is that it can be recreated in a healthy way AND it is a quick meal that you can cook in less than 30 minutes. Perfect for a busy week!
1-2 pieces of white fish like cod or sole
fresh lemon juice
fresh lime juice
1 cup of panko
1 small head of cabbage finely chopped
1/3 cup 2% plain Greek yogurt
cherry tomatoes sliced lengthwise
salt and pepper to taste
1/8 tsp chili powder
1. Cut fish into pieces small enough to fit inside of corn tortilla.
2. Bread fish with panko crumbs (and salt/pepper). Squeeze some lime juice onto fish.
3. Spray non-stick olive oil spray onto baking dish and bake fish for approximately 15 minutes.
4. Warm corn tortillas in frying pan. Place fish inside tortilla, top with cabbage, cherry tomatoes and crema sauce (see below). Serve immediately.
Mix 1/3 cup of Greek yogurt, 3 tsps of lemon juice and 1/8 tsp of chili powder. Feel free to add some water to mixture to desired consistency.
The end product is pretty delicious I must say. And my tummy thanks me for not giving it fried junk and god knows what kind of oil.
